Defending a thesis in the field of hotel and restaurant management is an important stage that sums up professional education. Students first prepare a project related to the practical aspects of their future work, e.g., an event organization plan, a restaurant menu, or a hotel management concept. The presentation takes place before a committee that evaluates both the content of the thesis and the manner of its presentation.
The defense – i.e., the practical exam, is of course preceded by a written exam, which Victorien passed with high marks.

In addition to preparing several dishes and having them evaluated, candidates must demonstrate theoretical knowledge as well as practical skills such as problem solving and customer service during their defense. Simulation elements are often included, such as presenting a scenario involving hotel guest service or resolving a crisis situation.
The committee pays attention to professionalism, creativity, and the ability to apply acquired knowledge in practice. Students must also answer questions about their work, which allows their preparation and understanding of the subject to be assessed. The defense often has a ceremonial character, as it symbolizes the completion of an important stage of education.

After successfully defending their theses, graduates receive a diploma confirming their professional qualifications. This moment opens the door to a career in the hotel, catering, and tourism industries, as well as providing opportunities to develop their own business initiatives. Thanks to this training, students are prepared to take on challenges in the dynamically developing service sector.
